The Ultimate Brunch Bagel

I'm not really a bread maker. Not a baker. But when my good friend April texted, excited about her latest find and creation, and shared her pics, I knew we'd be hand rolling and boiling bagels over here soon enough. After all, what better than a homemade bagel for one of our all time favorite "special occasion" brunches -- the Ultimate Brunch Bagel -- loaded with yummy smoked salmon, cream cheese, red onion, egg and capers! mmmmmmmmmmmmmm........ My husband, Scott, was in Heaven.

First stop: Bagel Making. 

Look at me!! Boiling Bagels!

For my topping, I used a mixture of sesame seeds, kosher salt and freshly ground black pepper. Next time we'll try Rye!

VOILA!! Homemade Bagels, ready to receive smoked salmon/cream cheese goodness!
Slice your bagel in half and toast. Smear half with cream cheese and top with smoked salmon, chopped boiled egg, finely diced red onion and capers. A side of fruit, and you have the Ultimate Bagel Brunch!
