Grilled Shrimp with Lemony Orzo and Italian Inspired Grilled Veggies

     Did I mention I just returned from Roma and the gorgeous Almalfi Coast area of Italy?  I think I may have let that secret slip...  Eight years ago one of my best girlfriends visited Italy, and said it changed her life, and I'm finding that it did speak directly to my culinary obsessions.  I must admit, both the country and the food were gorgeous, and I've since been on a mission to replicate some of what we had the pleasure of tasting while there.  The idea for this menu came from our second night in Roma.  After a long day of walking and walking, and walking some more, we ended the evening at an outdoor ristorante, dotted with sparkling lights heavenly food.  Our starter of grilled veggies included fennel -- fabulous!  This photo was taken that night, and works as the inspiration for this menu.

    And, Grilled Garlic and Herb Shrimp.

     Now for the Veggies....

    Use a Mandolin or sharp knife to slice assorted vegetables a scant 1/8 to 1/4 thick.  I used fennel, carrots, summer squash, zucchini, mushrooms and tomatoes. For the mushrooms, I skewered them whole. Brush all veggies with olive oil and lemon (or your marinade of choice) and season with salt and pepper.  Grill just until charred on each side.

     One of the areas we visited along the Amalfi Coast was Capri.  Lemons were HUGE here, and bursting with flavor.  


I  had orzo on hand, so decided to include a nice Lemony Orzo as an accompaniment to the shrimp and veggies.  

When I hand the plate to my husband, I imagine I hear "Grazie!," and respond, naturally, "Prego!"
