kale, mango and vidalia onion salad with buttermilk cilantro lime dressing


Yum yum yum.  Mangos 2 for a $1 at farmer's market today, and sweet vidalia onions too.  Plus home grown bunches of kale.  Sounds like salad. 


I love mango and cilantro with lime, so set to make a quick and creamy dressing of buttermilk, yogurt, garlic, lime and cilantro to pull the bowl together.


Dice the mango, slice the vidalia, and stem and tear your kale into small bite sized pieces.  I like to wash my kale in the sink in cold water with a bit of apple cider vinegar. 


Dress your kale and allow it to sit for about 15 minutes in the fridge, so the dressing wilts and softens the kale a bit. 


Add your mango and onion and toss. 



buttermilk cilantro lime dressing
1/2 cup buttermilk
1/2 cup greek style yogurt
2 T canola oil mayonnaise
1 T fresh lime juice
2 T chopped fresh cilantro
1 fat clove garlic, grated
dash of hot sauce
sea salt and freshly ground black pepper

Grab your mason jar and fill it with the ingredients. Twist on the lid and shake it all up.

(serves 2)
kale, 3 cups, washed, stemmed, dried and torn into bite sized pieces
1/2 mango, diced
1/4 vidalia onion, sliced
buttermilk cilantro lime dressing

Make your dressing, and allow to chill at least 30 minutes in fridge.

Wash, stem, dry and tear your kale into bite sized pieces, about 3 cups.  Dice half a mango, and slice 1 quarter vidalia onion.  Dress your kale and allow the dressing to slightly wilt and soften the kale, about 15 minutes in fridge.  Add in the mango and onion and toss.  Dig in!
