spring green salad = pea shoots, mint, peas, feta, garlic chives and pistachios

Happy Spring !!!

I have been waiting and hoping that one day pea shoots would arrive in my bushel, just so that I could make this salad.   It's an excellent salad, I've made it many times in the past, substituting spinach for the pea shoots.  It is very good that way.  But using the baby pea tendrils is absolutely perfect here.

You can imagine my excitement, when I opened my Farmhouse bushel this week, and found these glorious green tendrils waiting inside...

In a bowl, combine pea shoots and/or baby spinach, peas, mint, pistachios, feta and some chopped pretty, green garlic chives from the garden. Drizzle with your favorite vinaigrette.   Happy Spring!
